Strawberry Cheesecake

Enjoy this recipe for creamy strawberry cheesecake!

Crust:

11/2 cup crushed digestive biscuits or Graham Crackers

3 tbsp granulated sugar

1/2 tsp cinnamon

6 tbsp butter, melted

*Bake crust at 350° for 10 minutes.

Set aside to cool.

Cheesecake:

16oz cream cheese, room temperature

3/4 cup granulated sugar

1 tsp vanilla extract

1 tsp lemon zest

3 tbsp sour cream

1 1/2 tbsp cornstarch

2 large eggs

1 large egg yolk

1 tsp lemon juice

*Bake in a 6″ pan, in a preheated oven at 400° for 8 minutes, then lower the temperature to 225° and bake for another 40 minutes. Turn off the oven, and leave the cheesecake in for 1 hour with the oven door slightly opened.

*Refrigerate for at least 6 hours before slicing or adding toppings.

Strawberry Topping:

4 cups frozen strawberries, chopped

3/4 cup granulated sugar

1 tsp lemon juice

Star anise spice

Pinch salt
