Currant Rolls

It’s the simple things in life! Like enjoying these flaky, crisp, golden currants roll fresh from the oven! Homemade is better!

Pastry dough:

3 cups all purpose flour 1 tbsp sugar

1/4 tsp salt 3 tbsp vegetable oil

1 cup cold unsalted butter, cubed

3/4 cup ice cold water

2 tsp vinegar or lemon juice

Filling:

3 cups currants

1/4 cup white sugar

1/4 cup brown sugar

1 tbsp cinammon

1/4 tsp nutmeg

1/2 cup softened butter Eggwash (1 egg mixed with 2 tbsp water)

Bake in a preheated oven at 375° for 30 minutes, and then at 350° for 15-20 minutes. Enjoy!
