These homemade croissants are so buttery and airy! They are perfect to fill, or to enjoy on it’s own with a cup of tea!It’s the perfect little project to bring out the baker in you! Enjoy!
Ingredients:
2 3/4 cups all purpose flour
1 3/4 tsp yeast
4 1/2 tbsp granulated sugar
2/3 cup water
1/3 cup warm milk
3/4 tsp salt
1 1/2 tbsp unsalted butter, room temperature
3/4 cup + 2 tbsp unsalted butter, softened
Eggwash:
1 egg mixed with 1 tbsp water = golden color and modest shine
OR
1 egg yolk and 1-2 tbsp heavy / whipping cream = more browning and shine
OR
Heavy / whipping cream only = Vegetarian option, more rustic browning
Bake the croissants in a preheated oven at 375° for 15 minutes.
*It’s ideal to do a total of 5 folds, but you can do less. After each fold, refrigerate the dough for at least 2 hours, or up to 8 hours.*I usually prepare the dough and do the first fold on the evening of Day 1. Do the remaining 4 folds, 2-3 hours apart on day 2. Bake the croissants on Day 3. The flavor, in my opinion peaks on Day 3.
