Coconut Rolls

Dough Ingredients:

1 cup full cream milk

½ cup butter (unsalted butter or margarine)

½ cup granulated sugar

¼ cup water

1 tsp sugar

1 tbsp yeast

2 large eggs

1 tsp salt

¼ tsp grated nutmeg

4 ½ cups flour

Dough Method:

1. Scald milk in a saucepan. Add butter and sugar and stir until melted. Set aside.

2. Add warm water, yeast and 1 tsp sugar into a large mixing bowl, or the bowl of a stand mixer, and stir well. Let sit for 5 minutes until foamy.

3. When the yeast mixture is foamy, add in milk mixture, eggs and 2 cups flour and mix on low speed for 2 minutes. Alternatively, if you’re not using a stand mixer – mix in circular motion using a wooden spoon or spatula.

4. Add in 2 1-2 cup flour and continue mixing at medium speed for 3 minutes. Or if mixing by hand, keep mixing with spatula for 2 minutes until a soft dough forms.

5. Turn dough onto a floured surface. Let rest for 3 minutes. If mixed with stand mixer, gently knead the dough to form a smooth ball. If mixed by hand, continue to knead on a floured surface for 5 minutes until a smooth ball forms.

6. Turn dough into an oiled bowl, cover with plastic wrap and let rest in a warm place for 50-60 minutes, until doubled in size.

This dough works great in coconut rolls, cinnamon buns, and other similar recipes.

Coconut Rolls Filling Ingredients:

1 coconut grated (2 ½ cups)

2/3 cup granulated sugar

1 tsp cinnamon

¼ tsp nutmeg

Pinch spice or all spice

½ tsp coconut essence or vanilla essence

3-4 tbsp water

Coconut Rolls Filling Method:

Mix all ingredients into a pot. You can adjust the amount of sugar and water depending on the sweetness level you want and the amount of coconut you are using. Let cook on low heat for 3-5 minutes until the sugar is dissolved and the liquids have dried out.

Assembly:

1. Roll out half of the dough to ½ inch thick rectangle.

2. Add a light brushing of melted or softened butter onto the dough, and then sprinkle the coconut filling evenly over the butter.

3. Tightly roll the dough, starting from the long end, into a log.

4. Place the log onto a baking tray lined with baking paper, and lightly greased. Brush the top of the dough lightly with melted butter. Let rest for 20-30

minutes until the roll has doubled in size.

5. Bake in a preheated oven at 375 degrees for 20-25 minutes, or until golden brown.

6. Prepare a simple syrup by adding ¼ cup water and ¼ cup granulated sugar to a saucepan. Cook on medium heat, stirring occasionally until the sugar has

dissolved. Brush syrup over finished coconut roll and sprinkle lightly with granulated sugar.

7. Enjoy!

Bonus: Cinnamon Rolls (Using the second ½ of dough)

Ingredients:

2 tbsp butter (softened or melted)

1/3 cup fine brown sugar, or granulated sugar

2 tsp cinnamon

¼ cup butter

½ cup fine brown sugar

¼ cup chopped pecans or almonds

Method:

1. Pour ¼ cup melted butter into a 9 inch round deep pan, or 8 inch square deep pan.

2. Sprinkle ½ cup fine brown sugar over melted butter, and set pan aside.

3. Roll dough out to ½ inch thick rectangle.

4. Brush 2 tbsp melted or softened butter over dough.

4. Mix Cinnamon and 1/3 cup sugar together, and sprinkle mixture evenly over dough.

4. Starting at long side, roll into a log.

5. Cut log into slices roughly 2 inches thick, and place slices into baking pan roughly 1 ½ inch apart.

6. Cover and let rest for 20 minutes or until doubled in size.

7. Bake in a preheated oven at 375 degrees for 15-20 minutes or until golden.

8. After cooling for only 2 minutes, carefully invert the pan onto a large plate or board to reveal the beautiful cinnamon buns with glaze.

9. Optional – Allow cinnamon buns to cool for 15 minutes before adding cream cheese frosting.

Cream cheese frosting:

4 oz cream cheese, softened

3 tablespoons butter, softened

¾ cup powdered sugar

½ teaspoon vanilla extract

Method: Mix all ingredients together until smooth. Enjoy!
