Brioche Muffins

These rich brioche muffins are crisp on the outside and soft on the inside. The ingredients are so simple, they are made ahead of time, and they require no kneading. Win, win, win!

Brioche muffins are the perfect addition to any breakfast, lunch or dinner spread! You can substitute bacon, cheese and chives for the glazed fruits. Wow! It sounds mouth watering, right! What other flavor combinations can you think of?

Ingredients:

4 tbsp full cream milk

2 tbsp all purpose flour

1 tbsp yeast

1 1/2 cup all purpose flour

4 tbsp icing sugar

1/4 tsp salt

1 1/2 tsp mixed peel, finely chopped

4-5 tbsp glazed mixed fruits

3/4 tsp cinnamon

2 eggs, lightly beaten

2 tbsp full cream milk

6 tbsp unsalted butter

Eggwash

1 egg + 2 tbsp water

Bake at 350° for 25 minutes.

Recipe makes 6 large muffins.
